Chili Lime Salmon

Dinner

Preheat broil setting on high heat. Spray a baking sheet with cooking oil spray. Set aside.

Whisk lime juice, parsley, olive oil, water, garlic, chili flakes, cumin, salt, and parsley together to combine. Add the honey and whisk together again, until honey runs smooth in mixture. Arrange the filet salmon, peppers, and onions in a single layer on the prepared baking tray; pour over half of the marinade. Toss the peppers and onions to coat. Rotate the salmon to coat in marinade.

Broil until peppers are just beginning to char at the edges (about 10 minutes) and the salmon is cooked to your liking (about 10 minutes as well). Remove from oven and serve immediately with lemon wedges. Add remaining marinade over salmon.

**If you want to cook peppers more remove salmon from tray and return peppers to oven

4 Salmon Filets (Wild Caught)

½ cup freshly squeezed lime juice (or just two limes)             

½ cup fresh chopped parsley                                                  

1 Red bell pepper, chopped

2 TBS olive oil                                                                         

1 Green bell pepper, chopped

2 TBS water                                                                            

1 Yellow bell pepper, chopped

1 TBS minced garlic                                                                 

1 onion, cut into wedges

1.5 tsp red chili flakes (more optional)                                    

1.5 tsp ground salt

1 tsp ground cumin                                                                 

½ TBS honey
