Baked Eggs in Tomatoes
Saute spices and vegetables together until cooked.
fold in gently beaten eggs
Place in muffin cups, 9x11 baking dish or other pan
Bake at 350 for 20-30 min.
1 tsp EVOO
1 small onion chopped
1/2 cup greens of choice (spinach/kale)
Feel free to add mushrooms or another vegetable
2 garlic cloves minced
1 16oz can diced tomatoes drained
1/2-1 black pepper or red pepper flakes
salt to taste
Chopped fresh basil garnish
