Creamed Spinach with Greek Yogurt
Thaw frozen spinach. Once spinach is thawed, drain it throughly by squeezing it in a colander (use a bowl to press the spinach down in the colander).
In a medium saucepan, over low heat, combine garlic, onion, and olive oil. Saute until browned, about 5 minutes.
Slowly stir in spinach, and cook through. Stir in the yogurt, pepper, and 1 tablespoon cheese. Remove from heat.
Place in medium baking dish. Drizzle cream and remaining cheese over the top. Bake at 350 degrees for 20 minutes. Mixture should be bubbly.
1 tablespoon heavy cream
20 oz frozen spinach
2 tablespoons olive oil
1 medium sweet yellow onion, chopped
3 cloves garlic, chopped
1 cup fat free plain Greek yogurt
1/4 teaspoon pepper
2 tablespoons shredded parmesan cheese or fat free mozzarella
