Fennel Apple Salad
1. In individual bowls or plates, place a handful of lettuce. Layer the remaining ingredients
2. Wisk together all dressing ingredients and drizzle over the salad.
2 bulbs fennel, thinly sliced
1/3 red onion, sliced
1 green apple, thinly sliced
1 red grapefruit, peeled and sectioned
1/4 cup chopped almonds or walnuts, toasted
leafy green lettuce
Dressing: 1 tsp lemon juice, 1 tsp lime juice, 2 tsp grapefruit juice,
1/4 cup olive oil, 1 tsp chopped basil leaves, salt and pepper
