Horseradish-Crusted Beef Tenderloin
Preheat oven to 400 degrees F
Combine horseradish, olive oil, and Dijon mustard in a bowl.
Season tenderloin with salt and pepper. Coat tenderloin with horseradish and mustard mixture.
Roast tenderloin in the oven. Check doneness using a meat thermometer, about 35-40 minutes for medium-rare.
2 tbsp of grated horseradish
extra virgin olive oil
1 tsp Dijon mustard
2 lbs of beef tenderloin
salt and pepper to taste
