Italian-Style Crustless Cheesecake
Preheat oven to 325 degrees.
Spray a 9-inch pie plate with cooking spray.
Mix the first four ingredients in a bowl until smooth.
Pour in a pie plate and add almonds on top of mixture.
Bake 45 to 60 minutes or until a knife inserted into the center can be removed cleanly.
Cool on a wire rack and chill.
Refrigerate until serving.
1 lb. container non-fat or part-skim ricotta cheese
1 tsp. vanilla
Agave nectar to taste (preferably raw and organic)
Handful of silvered almonds
