Microwaveable Muffin in a Mug

Snack

In a small bowl, combine all ingredients (except berries) until moistened.  Gently stir in berries.  Divide mixture between two mugs.  Microwave each mug on high for 60-90 seconds.  

 

Allow to cool, and enjoy.

 

1/4 cup almond meal flour

1/4 teaspoon honey

1 teaspoon cinnamon

1 whole egg, beaten

1 cup blueberries or other berries

1 teaspoon olive or coconut oil

1/2 teaspoon baking powder

pinch of salt.
