Mushroom & Cauli Rice with Feta
In large skillet over medium heat sauté mushrooms and onion in olive oil. (~3-4 min)
Add garlic and cauli rice. Cook until slightly tender. (~5 min)
Add chicken stock and thyme and continue cooking another 5 minutes until cauliflower is fully tender and most of the liquid is absorbed.
Remove from heat and add feta. Salt & pepper to taste. Enjoy!
1 tbsp olive oil
2 cups cremini mushroom, sliced
1 cup onion, diced
3 cloves garlic, chopped
4 cups cauliflower rice (frozen does not need to be thawed)
½ cup chicken stock, low sodium
¼ cup feta cheese, crumbled
1 tbsp fresh thyme
1/2 tsp salt
1/4 tsp black ground pepper
