No Bake Peanut Butter Cookies

Snack

Place peanuts, peanut butter, raisins, salt, and vanilla extract in a food processor.  Pulse until smooth.  Roll dough into small balls and place on a cookie sheet lined with parchment paper or waxed paper.   Press down with a fork.  Chill.  These easy no-bake cookies are a great treat to make with the kids- no oven and no sharp knives to contend with.  Just make sure the adult handles the food processor!

Optional modification: dust the cookies lightly with coco powder.

1/2 cup all natural peanut butter

1/2 cup plus 3 tablespoons raisins

1/2 teaspoon salt

1/4 cup roasted unsalted peanuts

1/4 teaspoon pure vanilla extract

1/2 teaspoon coco powder (optional)
