Oatmeal Muffins

Breakfast

Preheat oven to 325 degrees. In a bowl combine applesauce, eggs, honey, milk, and vanilla. Combine thoroughly until smooth.

 

Add oats, baking powder, baking soda, salt, and cinnamon and mix well. Finally add berries.

 

Bake in muffin tins with liners for 20-25 minutes or until toothpick comes out clean.

2 ½ cups old-fashioned oats (1.5 cups ground, 1 cup whole) (optional: toast oats)

1 cup unsweetened applesauce

2 large eggs lightly beaten

1/3 cup honey

3/4 cup milk

2 tsp vanilla extract

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

½ c. berries (optional)
