Peanut Chicken Satay

Dinner

1.In a large bowl combine coconut milk, garlic,
curry powder, salt, pepper, and cayenne. Add
chicken, mix well and store marinade in fridge for
6 hours.
2. Skewer chicken cubes leaving enough skewer
left to handle. You can either grill them or bake
them on a baking sheet at 450. 10 minutes one
side, then 5 minutes the other or until chicken is
cooked through.
4. Add remaining ingredients to a small sauce pan
over medium-low heat. Whisk sauce together until
warm and smooth.
5. Brush cooked chicken skewers with peanut
sauce and serve!

1 pound chicken breast, cut into 1" cubes
10 wooden skewers (soaked)
1/2 cup lite coconut milk (canned)
3 cloves garlic, minced
1/2 tsp curry powder
1/2 tsp salt
1/2 tsp ground black pepper
1/4 tsp cayenne powder
1/4 cup natural creamy peanut butter
3 cloves garlic minced
2 tbsp sesame oil
1 tbsp olive oil
1 tbsp soy sauce
1 tbsp lime juice
