Pumpkin Pancakes

Breakfast

1. Gently mix ingredients together. Avoid over mixing. Allow batter to sit for 8-10 minutes.
2. Cook pancakes as usual over medium to medium-low heat.
Tip: use room temperature ingredients to avoid having the coconut oil re-solidify

1 cup pumpkin puree
¼ cup milk of choice
2 tablespoons coconut oil melted
1 tablespoon lemon juice 
1 teaspoon maple syrup (or honey)
1 teaspoon vanilla extract
2 eggs
1 cup oat flour
½ teaspoon each: baking soda, salt, ground cinnamon, ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves or allspice
