Rainbow Cruciferous Chop Salad

Lunch

1. In a large bowl combine veggies, herbs and seeds.
2. In a small bowl or blender, mix oil, lemon, dijon mustard, salt and pepper for dressing.
3. Add dressing to veggies and combine well.

2 cups kale, chopped
2 cups broccoli, chopped
2 cups Brussel's Sprouts, chopped
2 cups purple cabbage, chopped
1 cup carrots, shredded or chopped
1/2 cup red onion, chopped
1/2 cup fresh parsley, chopped
1/2 cup pumpkin seeds
2 T sunflower seeds
3 T extra virgin olive oil
1/2 cup lemon juice
3 t Dijon mustard
Salt & Pepper to taste
