Raw Zucchini & Parmesan Salad
Trim the ends off of the zucchini and slice into 1/4″ round pieces. Coarsely chop into bite-size pieces and set aside.
In a salad bowl, whisk together the olive oil, lemon juice and salt and pepper to taste until well combined. Add the zucchini pieces and toss until well coated.
Sprinkle with low-fat Parmesan cheese.
2 lbs. green zucchini (no larger than 1″ round)
1 lb. fresh arugula or Boston lettuce
3 to 4 tbs olive oil
2 tbs. fresh lemon juice
Salt and pepper
