Roasted Delicata Squash
Cut squash by length and then crosswise. De-seed squash and cut into ½ inch thick wedges.
Toss with onion, 1 tbsp oil, & ¼ tsp salt and spread evenly on baking sheet.
Roast for 30 min, turning squash 1-2 times. Cook until squash begins to brown.
Combine remaining ingredients into a dressing and toss with vegetables. Enjoy!
2 lb delicata squash
1 md red onion, sliced
2 tbsp oil (divided)
1 tsp fresh rosemary, chopped
1 tbsp maple syrup
1 tbsp. Dijon mustard
