1.Combine all ingredients except seafood and avocado in a large bowl.
2. Cover and refrigerate for at least 2 hours or for up to 3 days.
3 When ready to serve, divide into 4 equal portions and top each with 1/2 cup seafood and 1/4 of the avocado.
3 cups vegetable juice
1 orange bell pepper, diced
1.5 cups fennel or celery, diced
1 cup tomato, diced
1/3 cup red onion, finely diced
2 T red wine vinegar
2 T extra virgin olive oil
1 t Old Bay Seasoning (or similar)
2 cups cooked lobster or shrimp, chopped
1 avocado chopped
Salt & pepper to taste
