Spicy Chicken Soup
Clean dried beans. Soak overnight OR boil in 2 cups of water for 10 minutes, and allow to stand 90 minutes, drain beans.
Place beans in blender with 2 cups of water. Blend until smooth.
Return mixture to pot. Add in remaining ingredients and simmer on low for 40 minutes.
Serve with 1 tsp of low fat cheddar cheese. (optional)
1 cup mixed dried beans
1/2 lb chicken breast, boneless, skinless, cooked and diced
4 adobo chiles with sauce (goya-small can)
4 cups low sodium vegetable stock
1/4 onion, chopped
2 stalks celery, chopped
1 8oz can diced tomatoes
1 can white beans
