Spinach Artichoke Dip

Snack

1. Blend cashews (drained), vinegar,
lemon juice, garlic, and water until
smooth. Set aside.
2. Add chopped spinach to a non-stick
pan on medium. Add a splash of water to
wilt spinach.
3. Combine cashew mixture, chopped
artichokes, and wilted spinach either in a
bowl (for a cold dip) or in warmed pan (for
a warm dip). Serve and Enjoy!

½ cup raw cashews (soaked in water for
at least 2 hours)
1 tsp apple cider vinegar
1 tsp lemon juice
¼ cup water
1 14-oz can of artichoke hearts,
chopped
3 small garlic cloves, minced
2 cups spinach, roughly chopped
salt to taste
