Strawberry Spinach Salad
Combine spinach, onions, strawberries, cucumber, feta cheese, and pine nuts in a medium bowl. Set aside.
In a small bowl whisk together the extra virgin olive oil, lemon juice, and a dash of salt and pepper. Drizzle dressing on salad and toss salad to coat.
Divide salad between two bowls. Enjoy immediately or refrigerate for up to 4 hours.
2 cups of spinach
¼ small red onion, thinly sliced
5 whole strawberries, sliced
½ small cucumber, thinly sliced
1 tbsp feta cheese, crumbled
1 tbsp pine nuts
¼ cup extra virgin olive oil
lemon juice from half of a lemon
salt and pepper to taste
