TACO ZOODLE SALAD

Put 2 tsp olive oil in a large pan. Stir the taco seasoning, the garlic, and the meat or shrimp together in the pan, and sauté until done. Set aside. Add 1 tsp olive oil to the pan and sauté the mushrooms, onion and green pepper until onions are translucent, adding salt and pepper to taste. In a separate pan, sauté the spiralized zucchini in the remaining 2 tbsp olive oil on medium heat. Top the zoodles with the cooked shrimp or meat and the vegetables. Top with sliced avocado, cilantro and salsa.
1 lb lean ground turkey or chicken, or 1 lb shrimp or beef 3 tsp taco seasoning Salt and pepper to taste 1 – 3 cloves garlic, chopped 1 avocado Spiralized zucchini – enough for 4 servings (about 4 cups, or 4-5 zucchini) 8 oz package sliced mushrooms 1 onion, sliced 1 green pepper, sliced 3 tbsp extra virgin olive oil, divided Handful of cilantro, chopped Salt and pepper to taste 1 jar of your favorite salsa
