Preheat your oven to 350. Coat a baking a sheet cooking spray thinly and evenly.
Cut the zucchini into circular slices.
In a bowl, mix together the flour, seasoning, and cheese. Toss in the zucchini and coat.
Place the zucchini on the baking sheet, and drizzle the olive oil on top evenly.
Bake for 30 – 40 minutes, flipping slices over a few times for best results.
4 tbsp olive oil
1 medium to large zucchini, cut into circular slices
2 tbsp of almond flour or chickpea flour
¼ tsp garlic powder
¼ tsp onion powder
¼ cup of low fat grated cheese
salt and pepper to taste
